Homemade: Chocolate Pudding and Velveeta Cheese

Ha! Obviously not *together*, but sharing 2 favorite recipes. I'll try to get them transferred to the Kitchen blog this week if I have time.

Ok, pudding first:
This is D-E-L-I-C-I-O-U-S.
Absolutely the best homemade pudding we've made :) And it set up perfectly for a pie, too. Base recipe makes 1 pie, so of course we quadruple'd it....and used graham crusts instead of homemade pie crust.

Chocolate Cream Pie
(Totally homemade and YUMMY!!)

1 1/2 c milk
1/2 c sugar
2 TB flour
2 TB starch
1/2 c milk
2 yolks
2 TB cocoa
1/2 tsp salt
1 TB butter
1 tsp vanilla
Bring milk to scalding in heavy pan. Mix next 7 ingredients into paste and whisk well into hot milk. Stir over med heat until thickened. Remove from heat, add butter/vanilla. Let cool and pour into baked crust.

And the Homemade Velveeta:

In a nutshell, it's 2 1/2 gallons fresh milk, brought to 128 and then 2 cups vinegar stirred in. Stand, drain thoroughly, and shred up. Add 3 tsp baking soda, 3 tsp salt and mix in mixer :) Melt a little butter, add a bit of cream, stir over some heat to blend then select something to 'mold' it in and voila!

Now, I don't have cheese coloring --though we did toy with the idea of a bit of paste food coloring :) And while it was really good, I think a slight boost of flavor would do well. It melts very smooth, add in some seasonings, maybe a little pepperocinis and awesome nachos! The grilled cheese sandwiches at lunch were delicious, but yeah, a tad mild.

Either way, both recipes use a good amount of milk and hey, these days that's what makes this homestead happy :)

While milk ( whole not powereded) as many have tried to politely point out to you for so long is healthier.... While we are so glad you are blessed with a cow, and the Lord is good. While we are glad you are no longer doing the powered milk, etc please stop bragging of the milk in front of many who don't have that right now. Be thou humble , and blessed.

Thanks for the recipes. Gonna make the pudding here in a bit :) I also appreciate the velveeta recipe; loathe to buy the "real" stuff due to additives so this will work very nicely indeed!

Our dear sister in Christ is not bragging nor boasting about what the Lord has provided for her and her family.
