Ok, I had agreatrecipe froman old Amish cookbook and do you think I can find it now? 'Course not!
But, I found a couple online that are very similar. And, so I don't lose them yet again, I'm posting them here and at the kitchen blog and the Homestead blog!
Bring on the bushels of zucchini!!!

• 1 recipe pastry for a 9 inch double crust pie
• 2 large zucchini
• 2 tablespoons lemon juice • 1 pinch salt
• 1 1/4 cups packed brown sugar
• 1 1/2 teaspoons ground cinnamon
• 1 1/2 teaspoons cream of tartar
• 1 pinch ground nutmeg
• 3 tablespoons all-purpose flour
DIRECTIONS
Peel the zucchini. Cut into quarters lengthwise, then remove seeds and cut crosswise (as you would cut apples for apple pie).
Toss together 4 cups chopped zucchini, lemon juice and salt.
Place mixture into frying pan and cook until tender-crisp.
In a separate bowl, mix together the brown sugar, cinnamon, cream of tartar, nutmeg and flour.
Add the cooked zucchini to sugar mixture and mix well. It will be a little runny, but that's OK.
Place filling into a 9 inch pie crust, dot with butter, and place top crust on.
Bake in oven at 400 degrees F for 40 minutes or until golden brown.

I make this all the time when fresh zucchini is in...one note though..slice the zucchini thin. If you do you'll never know its not apples but if you slice the zucchini too thick, it is noticeable because of the texture...love your blog by the way..jana
One more thing..I don't cook mine. I just toss the thinly sliced zucchini with all the ingredients and put them into a pie shell..and bake........jana
I'm from Alabama where zucchini grows easily and I look for every recipe I can find on it. I've made this several times and it is great. My family could not tell the difference.
The mock apple pie sounds delicious, unfortunately all of our zucchini is shredded and in the freezer, but if I come across a zucchini I am going to make this, and will definitely keep it in mind for next summer!
Peach cobbler sounds good too, our peach trees did not produce this year due to a late frost, but several people in our area are selling redhaven peaches, so I will purchase a few and make this dessert for Labor day :)
