RecipeShare: Plain Pam's Meatloaf Casserole

Yum....

Meatloaf Cassarole...
By Plain Pam 

2 lb. hamburger
2 tsp. salt
½ tsp. pepper
1 egg, beaten
1 c. oatmeal
1 c. tomato juice
3 qt. mashed potatoes, seasoned to taste
Velveeta cheese

Directions
Mix all together, except potatoes and cheese. Bake in a casserole dish for 1 hour at 350°. Spread potatoes on top, then cover with cheese slices and bake until cheese is melted.

That's funny Deanna, we had meatloaf last night for dinner with veg & had it cold tonight with ham & chicken & salad! Our tomatoes are just beginning to ripen, so it won't be long before I start making up the relish ..Yum!Hugs, Sharm

This almost sounds like Shepard's pie. I will have to give this a try since I don't like traditional meatloaf! Thanks for sharing!
