Testing Recipes with White Bean Puree

I have 3 loaves of Pumpkin Bread and a batch of Pecan Cookies going in the oven using white beans we cooked and pureed as the butter/oil substitute.

I know...never tried it and I do 3 loaves of pumpkin bread at once.

Honestly though, the children will eat it regardless of whether I like the flavor, so it's not a loss at all.

I'm stuffed something terrible today and have a scratchy throat. We were out in the hayfield with a neighbor I'm getting hay from and when he started baling, my throat started itching up a storm. Today it's a nice dull achey scratchy irritant.

Ahh, the joys of allergies. I've never had to deal much with allergies, but the seasonal "changes" between here and back north have given me short bouts of troubles ever since moving here.

Back to baking! Olders are cracking pecans for the freezer and youngers are napping.

That bean puree is a nice thickener for cream soups, too. Just don't tell my boys. Hope y'all have a nice weekend. ~Liz

Curious- are they pee-cans or
peh-cahns at your house? My Momma's family came from eastern Oklahoma, they moved west in the late 40's but my Great Grand-Daddy, lived in Wichita, KS and would send my Grma up a box of freshley picked pee-cans each year. I was glad to volunteer to shell them for her!!

Never heard of using bean puree. Let us know how that goes. As far as the allergies, I have them something awful. I am now taking supplements and herbs for them and it has helped a lot. I am taking apple cider vinegar pills, stinging nettle, fish oil and a one a day vitamin. I still sometimes have to take my sinus pills but not as often and even when I do they are better than they were.

Wow - how did that bean puree work out in the bread?? Do you substitute it for the butter/oil 1 for 1?
